Garlic Jalapeno Shrimp & Tofu

Okay, not going to lie, but GARLIC JALAPENO ANYTHING tastes amazing. The crispy garlic and the slightly charred fresh jalapeños are delectable. I air fried some jumbo shrimp with the shell on along with bite sized pieces of tofu until it was nice golden and crispy and it was done in less that 20 minutes ! All you need is 4 simple ingredients! So easy and delicious for a weeknight meal. Serve over a bed or rice or on top of a refreshing salad!

What you’ll need:

  • 1-2lbs of large shrimp

  • package or 12oz of firm tofu

  • 6-8 large garlic cloves

  • 2-3 large fresh jalapeños

  • 3-5 green onion stalks

  • fresh basil

  • salt and pepper

  • flakey salt

  • olive oil

  • 1 T soy sauce

Instructions:

  1. Prepare garlic cloves by chopping into small pieces

  2. Slice fresh jalapeños into slices

  3. Chop green onions into small pieces

  4. Rough chop fresh basil

  5. Set garlic, jalapeños, green onions, basil aside.

  6. Season shrimp with salt and pepper and air fry at 390 for about 10 minutes and set aside in separate mixing bowl.

  7. Prepare tofu by squeeing out excess water and cut into bite sized pieces. Season with 1 T soy sauce and air fry at 400 for about 20 minutes or until crispy tossing halfway though. Combine crispy tofu to cooked shrimp mixing bowl and set aside.

  8. To a medium skillet add 1 tsp olive oil and sauté garlic until fragrant. Be careful not to burn garlic and keep spatula moving.

  9. Once garlic is fragrant, lower heat to low and add sliced jalapeños in single layer so that way they have a nice char. Let cook for 30 seconds- 1 minute until jalapeños are slightly charred and then continue stir frying

  10. Shut off heat or burner and add basil and green onions (save some green onions for garnish later).. Stir fry basil and green onions for about 30 seconds and remove from heat.

  11. Transfer garlic jalapeno mix into shrimp and tofu mixing bowl and toss

  12. Season with more black pepper and flakey salt to taste and toss again until everything is well combined

  13. Transfer to serving dish and garnish with more fresh green onions and flakey salt.
