Zucchini Pizza

This is such a healthy and yummy snack! My family isn’t a big fan of zucchini so I try to disguise them into irresistible cheesy bites; and to be honest, they didn’t even realize they were eating vegetable pizzas lol. I love how completely customizable these are. I made some salami and pepperoncinis ones today and they were a hit! Ive also done this with just pepperoni and jalapenos, or just with marinara and cheese; Anyway, they are DELICIOUS!

What you’ll need:

Servings: 2-3

  • 3 large zucchinis

  • 3 tsps olive oil

  • 1 tsp oregano

  • 1 cup marinara

  • salami/ pepperoni

  • pepperoncinis/jalapenos

  • shredded mozzarella cheese

  • fresh basil

  • 3 tsps fresh grated parmesan

Instructions:

  1. Start off by prepping zucchinis

    -Rinse and pat dry.

    -Slice in half longways

    -Remove insides by using a spoon and gently scooping out. Discard filling if desired.

    -Set hollowed out zucchinis aside

  2. To a small bowl, add olive oil and oregano and combine well.

  3. Using a basting brush, brush insides of hollowed zucchinis with oregano olive oil mixture.

  4. Place zucchinis into airfryer in one single even layer and airfry at 400F for about 5 minutes.

  5. Remove zucchinis and fill with toppings

    -Add tsp of marinara in each and top with favorite toppings. (I did half salami/pepperonicins and half just mozzarella. Top each with more mozzarella on top.

  6. Place back into airfryer at 400F for about 2-3 more minutes or until cheese is melted though.

  7. Transfer zucchinis to a serving plate and more marinara on the side for dipping.

  8. Cut up some fresh basil and add on top for garnish.

  9. Grate fresh parmesan on top!

  10. ENJOY RIGHT AWAY!
