Truffle Garlic Tomato Toast

If you have been following me for awhile, you know I have an obsession for toast. This is by far one of my favorite summer classics. The truffle garlic flavor is infused with the fresh lemon juice and leaves such a bright and refreshing zing of flavor to the tomatoes. I personally like scraping the fresh garlic on my toasted sourdough, but if you want a stronger garlic presence, ive also pressed the garlic into the tomatoes mixture itself and was delicious1 Try this one out, its one for the books.

What you’ll need:

Servings- 2

  • 12-14 baby tomatoes

  • 1 tsp lemon juice

  • 2 tsp truffle oil

  • 1 garlic clove

  • salt

  • black pepper

  • basil

  • 1 tsp olive oil, mayo, OR butter

  • 2 slices sour dough bread

Instructions:

  1. Start off by prepping tomatoes

    -RInse, pat dry, and slice in half longways

    -Place in a mixing bowl

    -Season with truffle oil, lemon juice, salt, and black pepper. Combine well and set aside

  2. Prepare bread

    -Drizzle with some olive oil; OR spread with mayo OR butter

    -Airfry bread slices at 300 for about 2-3 minutes or until slightly light golden and crispy

  3. Prepare basil while bread is airfrying

    -Rinse and pat dry basil

    -Roll basil leaves all together and slice into long thin pieces

    -Set aside

  4. Peel garlic clove

  5. Remove bread from airfryer and gently scrapethe garlic clove on the top of the crisp sourdough.

  6. Add a few spoonfuls of tomato mixture on top. Drizzle with some remainder of sauce .

  7. Top with fresh basil and enjoy!
