Taco Bell “The Mexican Pizza”

I want to start off by saying I love Taco Bell; I by no means am bashing them at ALL. This copycat recipe is just a joke that turned into a pretty delicious airfryer chicken tostada recipe lol ! The chicken breast is perfectly seasoned and super juicy. The concept of Taco Bell’s “Mexican pizza” is actually pretty genius; its almost like a double tostada open faced sandwich! Try this recipe out, its freaking bomb. If anything, this chicken recipe would go so well on top of a salad, or try shredding it up for some tacos !

What you’ll need:

Servings: 4

  • 2 large chicken breasts

  • 1 1/2 tsp garlic salt

  • 1 tsp cumin

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp dried oregano

  • 1/2 tsp chili powder

  • black pepper

  • salt

  • 4 tsp lemon juice

  • 8 tostadas (I used store bought)

  • 2 large avocados

  • 1 large tomato

  • Taco Bell brand “hot” sauce

  • 2 cups shredded cheese

  • romaine lettuce (optional)

Instructions:

  1. Prep chicken breasts

    -Rinse, pat dry, and season with garlic salt, cumin, onion powder, paprika, dried oregano, chili powder, 2 tsps lemon juice, and black pepper.

    -Mix well and airfry at 400F for about 15-20 minutes or until internal temperature reaches 165F.

  2. While chicken is air frying, prepare the rest of recipe.

  3. Prep guacamole

    -Remove skin and pits from avocado and transfer to a mixing bowl.

    -Season with 2 tsps lemon juice, salt, and black pepper. Mix well and set to the side.

  4. Wash and pat dry tomatoes/ romaine lettuce .

    -Dice tomato into bite sized pieces. Set aside.

    -Thinly slice romaine lettuce into shreds and set aside.

5. Once chicken is cooked though, remove from airfryer and let cool for 10 minutes before slicing through into long strips.

6. Assemble “mexican pizza”

7. On a microwave safe plate, place one tostada down, followed by a few spoonfuls of guacamole. Spread guacamole evenly.

8. Add chicken strips on top of guacamole, followed by a little shredded cheese

9. Then top “Mexican pizza” with a second tostada

10. Add a few tablespoons of taco bell’s hot sauce on top of second tostada and spread evenly as if this was marinara sauce to a pizza.

11. Add more shredded cheese on top of the hot sauce, followed by the diced tomatoes. Microwave entire “pizza” for about 30-45 seconds or untill cheese is melted .

12. Carefully place “Mexican pizza” on a cutting board and using a large cleaver, chop “pizza” into quarters.

13. Add shredded romaine lettuce on top and repeat until all “Mexican pizzas'“ are made.

14. Enjoy right away!
