Smashed Chili Cucumber Salad

Something so simple, yet so satisfying. This reminds me of eating at a Korean bbq joint, I ALWAYS ask for refills on this side dish! I love all the tangy and bright favor notes you get! I love using ponzu because of its citrus undertone, but feel free to substitute with soy sauce. I used chili onion crunch from trader joes, but you can just use chili oil with sautéed minced garlic, (this tastes amazing as well!). Eat this as an appetizer, side dish, or even as a snack! YUM.

What you’ll need:

  • 2 large cucumbers

  • 1 tsp ponzu or soy sauce

  • 1/2 tsp sesame oil

  • 1 tsp chili onion crunch or chili oil with fresh minced sautéed garlic

  • red pepper powder or chili flakes

  • furikake

  • 1 tsp rice wine vinegar

Instructions:

  1. Start off by prepping cucumbers

    -Rinse, pat dry, and cut quarters slices

  2. Using the back of your knife, gently smash cucumbers

  3. Cut into bite sized pieces and transfer to mixing bowl

  4. Season with ponzu, sesame oil, chili onion crucnch, red pepper powder, rice wine vinegar and furikake. Combine well.

  5. Transfer to serving bowl, and enjoy!
