Garlic Parmesan Truffle Potato Wedges

I am not really a potato person, but if they’re dressed up like this…. GIMME! These garlic parmesan truffle wedges are 5 star gourmet and is done in less than 45 minutes. If you have the time to let the potatoes soak, I highly recommend it as your potatoes will be fluffy on the inside and crisp on the outside. For the truffle, I just used my store bough stuff from Trader Joes; they have great options for truffle powder and oils. Double check with your local stores because sometimes they are seasonal items! This recipe is definitely a crowd pleaser and your guests will be asking you what restaurant you picked these up from!!

What you’ll need:

  • 6-8 russet potatoes

  • 1 tsp olive oil

  • 1 tsp garlic powder

  • 2 T grated parmesan

  • 1 tsp paprika

  • 1/2 tsp truffle powder

  • flakey salt

  • black pepper

  • 1 tsp truffle oil

Instructions:

  1. Prep potatoes

    -Peel, rinse, and soak for about 20-30 minutes

    -Cut in quarters. about 4 wedges per potato.

    -Pat dry and transfer to mixing bowl

  2. Season wedges with olive oil, garlic powder, 1 T parmesan, paprika, truffle powder, and black pepper. Toss to coat.

  3. Airfry wedges at 400F for about 15-20 minutes. (Toss halfway)

  4. Once wedges are cooked fork tender and crisp on the outside, transfer to a serving dish. Drizzle with truffle oil, 1 T parmesan, and flakey salt.

  5. Enjoy right way with your favorite dipping sauce!
