Deconstructed Spam Musubi
I am a sucker for SPAM musubi, but honestly sometimes i’m so lazy to make it. This is the same texture and flavors, but in a deconstructed version. Easy, delicious, and will satisfy those spam musubi cravings! I love adding corn for pops of sweetness to help balance out the salty flavor of SPAM. If using corn, don’t add sweetener. If using sweetener; use less corn. Add some sriracha on top, and you will never look back!
Instructions:
Start off by prepping SPAM
-Remove from packaging and cut into small bite sized pieces Set aside.
If using canned corn, remove from can and drain. Set aside.
Chop garlic cloves or press.
Have day old rice set to the side .
In a medium-hot skillet, add 1 tsp olive oil and stir fry garlic clove for a quick 5 seconds.
Add in chopped up spam and stir fry until spam has some color, about 1-2 minute.
Add in day old rice and lower heat to low. Season with soy sauce, sweetener, and black pepper. Combine well. Turn off stove and remove from heat.
To a hot skillet pan, add olive oil and wait for oil to smoke just a little. Carefully crack one egg and don’t break yolk. Egg should sizzle right away crisping up the butter edges. Turn down heat to medium and do not disturb until whites are cooked though and edges are crisp; About 3 minutes. Remove from pan gently to not break yolk. Set aside.
To a serving dish, add some spam rice. Top with sunny side up egg . Sprinkle furikake on top. Serve with seaweed snacks on the side.
To enjoy, break egg yolk and mix. Take one seaweed snack sheet and spoon some spam rice right on top. Gently fold and eat ! DELICIOUS!
