Shrimp Ceviche Lettuce Wraps
Just in time to celebrate cinco de mayo! Tradtional ceviche is made with raw shrimp that is cooked though with fresh lime juice; BUTTTT if you got picky kids like I do, I just cook the shrimp; it tastes great regardless of how the shrimp is prepared! I love how refreshing and BRIGHT this dish is. Honestly, I made it two days in a row because it was that addicting! Super easy to make and definitely a crowd pleaser!
Instructions:
Prep shrimp:
-Wash and pat dry
-Remove head, peel, devien, and season with garlic powder, paprika, salt, and black pepper.
-Airfry at 390 for about 7-10 minutes.
While shrimp is air frying, prepare vegetables and herbs.
-Wash and pat dry tomato, jalapeño, cilantro, and romaine lettuce. Set aside.
-Chop tomato, jalapeno, and avocado into small pieces and transfer to a serving dish.
-Chop cilantro. set aside.
-Slice limes in hald for squeezing and set aside.
Once shrimp is cooked and cooled. Chop into small pieces and add to serving dish along with tomato, jalapeno, and avocado.
Squeeze fresh lime juice, add chopped cilantro and mix well! Season with a bit of flakey salt !
Enjoy in a lettuce wrap or with tortilla chips of choice! Add extra hot sauce on top if you like spice!
