Cauliflower Salmon Crispy Spring Rolls
Okay, I completely understand that this is NOT a traditional spring roll recipe, but I CAN tell you that anything in spring roll form just tastes 1000x better!!! I love making this for my picky daughter who is not a fan of vegetables, but for some reason when its wrapped up, crispy, and has a dipping sauce…. SHES ALL IN. This is a great dinner idea and is so fun to make as a family; TRY IT OUT! Ps, you have to use Dan-O’s seasoning for this recipe, its a MUST.
Instructions:
(If preparing protein, cook before the steps. (I used leftover salmon)
Start off by prepping your cauliflower rice;
-Press or mince garlic and set aside.
-To a medium heat skillet, stir fry garlic until fragrant; About 10 seconds.
-Add in cauliflower rice and season with about 1 tsp of Dan-o’s spicy seasoning
-Stir fry until cauliflower rice if soft and cooked though. About 2-3 minutes.
-Turn off heat and transfer to a serving bowl.
Prepare dipping sauce.
-Combine greek yogurt, lemon juice, pressed or minced garlic clove, and 1/8 tsp Dan-O’s seasoning. Mix well and set aside.
Cut green onions and set aside.
Prepare rolls.
-Submerge rice paper into warm water for about 5 seconds.
-Place on a flat surface and start assembling.
-Add about 1-2 tsps on cauliflower rice
-Followed by protein (I used leftover salmon)
-Then add a heaping spoonful of chopped green onions
-Roll and tuck in sides to create a spring roll shape.
-Repeat until no more rice paper or cauliflower rice.
-FYI; you can enjoy as is, or airfry at 400 for 5 minutes if you want them crispy
Transfer springrolls to a serving dish and dip into sauce for enjoying!
*Let SpringRolls cool before eating ! Filling will be very hot !
