Green Bean Vermicelli Salad
Sweet, salty, spicy, and umami . This is the perfect appetizer, side dish to a bbq, or the main dish on a snack board ! Customize ingredients to your liking (:
What you’ll need:
Servings: 3-5
16oz long green beans
1 package dried vermicelli noodles (optional)
2 garlic cloves
1 tsp dried salted baby shrimp
2 large tomatoes (sliced) or 8oz baby tomatoes
Thai chili peppers
1 tsp sugar
1 tsp shrimp paste
1 tsp crab paste
1 tsp fermented fish paste (optional)
2 tsps fish sauce
1-2 limes
Instructions:
Prepare vermicelli noodles based off package instructions and let drain to the side if adding noodles.
Prep long green beans- Rinse, Pat dry . Remove ends and cut into 1-2in pieces .
Wash, dry tomatoes and slice into wedges . Set aside .
Place green beans into a mortar and gently smash until slightly broken thru
Transfer smashed green beans to a serving dish
To your mortar, add dry ingredients; garlic, dried baby shrimp, Thai chili peppers, & sugar . Use your pestle to smash contents until baby shrimp are completely disintegrated and contents turn into a paste .
Add in wet ingredients to mortar; shrimp paste, fish sauce, crab paste, fermented fish paste, tomatoes, and lime juice . Mix well with pestle until everything is well combined.
squeeze lime juice and taste to adjust
Add cooked vermicelli noodles and sauce into the same serving bowl with green beans . Using gloves, combine all contents together
