Lettuce Wrap Tacos

These lettuce wrap tacos are definitely a crowd pleaser, TASTY, and is super healthy! I love using ground turkey and black beans because it makes this recipe high protein and keeps you feeling full for hours! I made lettuce wraps today, but this is also a great option for making taco salad bowls ! Love seeing your foodie photos, tag me if you try this!

What you’ll need:

Servings: 4-6

  • 2lbs ground turkey

  • 12oz can drained organic black beans

  • 1 tsp cumin

  • 2 tsps dried oregano

  • 2 tsp chili powder

  • 2 tsp paprika

  • 2 tsps chicken bullion powder

  • 2 tsps onion powder

  • 2 tsps garlic powder (or fresh 4 chopped garlic cloves)

  • salt

  • black pepper

  • lettuce of choice

  • salsa of choice

  • cheese (optional)

  • sour cream (optional)

Tomato Salsa-

  • 2 diced tomatoes

  • 1/4 cup corn kernnels (canned)

  • 1 diced jalapeno

  • fresh chopped cilantro

  • salt

  • black pepper

  • 1/2 lime (juice)

Guacamole-

  • 3 large avocados

  • 1/2 red onion (diced)

  • 1 jalapeno

  • 1 lime (juice)

  • salt

  • black pepper

Instructions:

  1. Heat up a large skillet pan and add some olive oil— once pan is warm add in ground turkey and spices. Continue stir frying until ground turkey is about 50% cooked through, then add in drained black beans. Stir fry until ground turkey is completely cooked through and transfer to a bowl.

  2. Prepare tomato salsa by combining diced tomatoes, diced jalapeno, chopped cilantro, corn kernels, half of a lime squeezed juice, salt and black pepper. Mix well and set aside.

  3. Make guacamole by removing skin and pits of avocado and adding to a large ming bowl. Add in diced red onion, diced jalapeno, 1 whole lime squeezed juice, salt, and black pepper. Mix until avocado is broken down and is mixed to your liking— I like having a little bit of avocado chunks.

  4. Assemble lettuce tacos— Lay down clean romaine lettuce leaves and add in spoonfuls of ground turkey/black bean mix, followed by tomato corn salsa, then guacamole. I topped off with store bought salsa! You can also garnish with more lime juice, cheese, or sour cream.
