Crab Stuffed Avocado

This is such a fun and delicious way to enjoy an avocado ! I used fresh Dungeness crab for this recipe since its currently in season, but ive also done it with shrimp or tuna and they all tastes amazing. This almost reminds me of a California roll, but without the rice— (don’t add corn if you’re low carb!) If you try this, tag me ! I love seeing your foodie creations (:

What you’ll need:

Servings: 1-2

  • 1 large avocado

  • 1/4 cup diced cucumber

  • 2 tsps corn (can)

  • 1 tsp japanese mayonaise

  • 1 tsp sriracha

  • 1/4 tsp ponzu sauce

  • 1/4 tsp sesame oil

  • 4-6 oz fresh crab meat (or canned crab or shrimp, or tuna)

  • furikake

Instructions:

  1. Start off by carefully cutting avocado in half longways— remove pit and discard. Use a spoon to remove some of the avocado meat from each side and place in a mixing bowl.

  2. To the mixing bowl, add diced cucumber, corn, Japanese mayo, sriracha, ponzu, sesame oil, and mix well. Once mixture is well combined, gently fold in crab meat.

  3. Take each side of the avocado skins and fill back up with mixture— you can enjoy as is— or airfry at 350F for about 10 minutes— top should have some color .

  4. Garnish with more sriracha and furikake on top— enjoy!
