Lemongrass Shrimp Bites

These lemongrass shrimp bites are the most eye-catching, yet most flavorful appetizers you can make to bring to your next potluck!! What you’ll need:

Appetizer servings: 4-6

  • 3lbs jumbo shrimp

  • 1 tsp fish sauce

  • 1 tsp turmeric

  • 1 tsp garlic powder

  • 3 tsps lemongrass paste (or fresh chopped)

  • 1 tsp honey

  • salt

  • black peppper

  • 1 tsp baking powder

  • 1 cucumber (peeled ribbon thin, or thinly sliced)

  • fresh chopped cilantro

  • 2 long baguettes (diagonally sliced — 1 in thick slices)

  • japanese mayonnaise

  • sriracha

  • hot Maggie seasoning

  • pate

Instructions:

*Make sure all produce and veggies are thoroughly washed and dried

  1. Start off by placing peeled and deveined shrimp in a mixing bowl and season with fish sauce, turmeric, garlic powder, lemongrass paste, honey, baking powder, salt and black pepper. Mix to combine well.

  2. Airfry shrimp in one even single layer at 390F for about 7-10 minutes— or until they are cooked to your liking. (The baking powder will help crisp up shrimp edges.) Set aside, once cooked through.

  3. Prepare sauce by mixing equal parts japanese mayo and sriracha to mixing bowl— add a few dashes of hot Maggie seasoning and taste to adjust. Set aside.

  4. Slice baguettes diagonally into oval shaped 1in slices— toast in the air fryer at 400F for about 5 minutes or until golden and lightly crisp.

  5. Prep veggies—Peel cucumber into ribbons, or thinly sliced cucumber diagonally . Rough chop cilantro. Set aside.

  6. Assemble— place toasted baguettes slices to a serving plate and spread some pate, followed by some sauce, cucumber ribbons, shrimp, and garnish with chopped cilantro.
