Lemon Pepper Garlic Parmesan Crusted Salmon
I mean the title is enough said; This lemon pepper garlic parmesan crusted salmon is ALWAYS A HIT in my household. The lemon pepper pairs so well with the salmon flavors, and the garlic parmesan crust just sends it over the roof! I love using mayonnaise because it gives a nice golden crust and keeps the salmon juicy, but i’ve made it with greek yogurt too and it still got the job done! Serve it with some baby spinach or your favorite greens for a quick and delicious weeknight meal. This was literally done in less that 25 minutes. Try the same mixture over chicken breasts; YUM!!
Instructions:
Start by prepping salmon. Rinse, pay dry, and cut into fillets.
Season salmon with salt and pepper to taste. (Be careful with salt here; check lemon pepper for added salt in seasoning). Set aside.
In a separate mixing bowl, prepare salmon crust by combining mayo, parmesan, garlic powder, and lemon pepper seasoning. Mix well.
Grab one salmon fillet at a time and spread a good amount of mayo-parmesan mixture on top only. Continue until all fillets have spread on top.
Airfry salmon fillets in single layer at 370 for about 15 minutes.
While salmon is air frying, prepare salad vinaigrette.
Combine equal parts olive oil and lemon juice. Season with salt and pepper. Set aside.
To a serving dish, arrange cooked salmon and baby spinach.
Drizzle salad vinaigrette on top of spinach
Garnish with more parmesan on top of entire dish
