Jalapeno Tuna Corn Fritters

If tuna salads are the only thing your making from your can of tuna, look no further— these jalapeno tuna corn fritters are easy to make, high in protein, and super delicious! Wrapping the fritters in lettuce gives it a nice refreshing crunch ! The best part is that you can throw them in the airfryer and the recipe is done in less than 20 minutes— lets go !

What you’ll need:

  • 7oz canned tuna (drained)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp lemon juice

  • 1 egg

  • salt

  • black pepper

  • 1 cup shredded cheese

  • 1/3 cup canned corn (drained)

  • 1-2 jalapeno (sliced)

  • romaine lettuce

  • sweet chili sauce (optional)

Instructions:

  1. Start off by placing drained tuna into a large mixing bowl and add in one cracked whole egg, and seasonings— garlic powder, paprika, lemon juice, salt, black pepper, shredded cheese, and corn. Mix well to incorporate.

  2. Using your hands, take about a spoon full of the tuna mixture and roll in to a ball, pressing down gently to create little “tuna patties”.

  3. Once patties are formed, place them onto a parchment paper or greased tray in one even single layer. Press down jalapeno slice on top into each tuna patty.

  4. Air fry tuna patties in one even single layer at 400F for about 10 minutes or until patties are warmed through and edges have crisp up and become golden. (You can flip halfway if you’d like both sides to be crisp)

  5. Transfer crisp tuna patties to a serving dish and enjoy wrapped in fresh romaine lettuce and dip in sweet chili sauce.
