Ep. 1 Meal Prep Monday Series | Lemon Garlic Chicken Breast

In this series, I am focusing on healthy goals and proteins that would work well with any meal-

This lemon garlic chicken breast is one of my all time favorites for an easy, delicious, and healthy protein to add to any meal. The flavors are neutral, yet bright and refreshing. Its the perfect addition to salads topped with baby tomatoes, shaved parmesan, and your fav dressing on top; add to rice/noodle dishes; served up with fresh steamed vegetables on the side— possibilities are endless!

I like to just store in a large airtight container in the fridge. Its usually good for up to 3 days. You can also pre-prep your meals if you’d like in separate meal containers— up to you.

My general rule of thumb is one large chicken breast equals about 2 servings—

What you’ll need:

Servings: 4

  • 2-3 chicken large chicken breasts

  • 6 cloves of garlic

  • 1 small lemon

  • salt

  • black pepper

Instructions:

*Make sure all protein is washed and pat dried

  1. Cut chicken breasts into bite sized pieces and transfer to a mixing bowl.

  2. Chop/mince garlic cloves and add into same mixing bowl

  3. Cut lemon in half and squeeze juice into mixing bowl.

  4. Season with salt and black pepper— you can also add more seasonings of choice here, but I find salt and pepper is perfect for me.

  5. Mix well- and cook until internal temp reaches 165F

    -Airfry at 400F for about 12-15 minutes

    OR

    -Pan fry with a little olive oil on medium-high heat— about 12-15 as well. Flip halfway.
