Copycat KFC Mashed Potato Famous Bowls (Meal-Prep)
What You’ll Need:
Servings: 4-6
• 6 large potatoes
• 3 tbsp butter
• 1/3 cup milk
• 1/3 cup sour cream
• 4 boneless, skinless chicken breasts
• garlic salt
• black pepper
• onion powder
• shredded Colby jack cheese
• 1 can corn
• store-bought or homemade gravy

Instructions:
1. Prepare the clean potatoes by peeling and discarding skin.
• Bring a large pot of water to a boil and cook the potatoes until fork-tender . (About 20 minutes).
• Drain and mash the potatoes using a potato masher.
• Stir in butter, milk, and sour cream until smooth and well combined. Salt to taste.
2. Cook the Chicken
• Preheat the air fryer to 400°F.
• Season the chicken breasts with as much garlic salt, black pepper, and onion powder as you like.
• Air fry for 20–30 minutes, or until the internal temperature reaches 165°F.
• Let the chicken rest for at least 10 minutes before slicing.
3. Assemble the Meal Prep
• Divide the mashed potatoes into meal prep containers.
• Sprinkle a little cheese over the potatoes.
• Add corn and sliced chicken.
• Pour gravy over the top and finish with more cheese.
4. Storage
• Refrigerate for up to 4 days. Reheat before serving.
