Birria Eggrolls (Easy Airfryer Meal Idea)
What You’ll Need:
1 lb cooked beef birria (or Trader Joe’s frozen birria)
1/2 cup consume (from birria)
1 red onion, finely chopped
cilantro, finely chopped
shredded mozzarella cheese
12-16 egg roll wrappers
2 tbsp cornstarch
4 tbsp water
Olive oil (for brushing)
Instructions:
1. Prep the Ingredients:
-Clean and chop cilantro and red onion into small pieces. Set aside.
-Prepare birria or follow package instructions on TJ’s frozen beef birria. Shred the beef with a fork or your hands.
-Save consume for dipping later.
2. Make Cornstarch Slurry:
- In a small bowl, mix 2 tbsp cornstarch with 4 tbsp water until smooth. This will help seal the egg rolls.
3. Assemble the Egg Rolls:
-Lay out an egg roll wrapper (use two wrappers for extra sturdiness).
-Lightly brush the edges of the wrapper with the cornstarch slurry.
-Add a few scoops of shredded birria to the center.
-Sprinkle chopped red onion, cilantro, and shredded mozzarella on top.
-Roll tightly, folding in the sides as you go to create a sealed egg roll.
4. Air Fry the Egg Rolls:
-Preheat the air fryer to 375-400°F.
-Brush each egg roll lightly with olive oil on both sides.
-Place them in the air fryer in a single layer.
-Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
5. Serve & Enjoy:
- Let the egg rolls cool slightly before serving.
-Serve with warm saved consume for dipping (add extra red onions and cilantro).
