Umami Butter Rice Krispie Treats
I honestly have never really been a fan of Rice Krispie treats only because I haven’t had one that wasn’t overwhelmingly sweet …. UNTIL my umami butter Rice Krispies . These have the perfect balance and are for the sweet and salty lover . (Think sweet and salty like cookies and cream or Oreo coookies). My secret ingredient is substituting the salt component and using FISH SAUCE—- and I need you to just trust the process !! If you’re truly a foodie, you will love these as much as I do; and if you’re scared, go to church lol
What you’ll need:
6-8 cups Rice Krispie cereal
6oz butter
1 tsp fish sauce
10oz large marshmallows
1 tsp vanilla extract
5oz mini marshmallows
sprinkles (optional)
chocolate pieces (optional)
parchment paper
9 x 12 baking dish
cookie cutters (optional)
Instructions:
. Melt the butter in a large Dutch oven over low heat, stirring continuously until it turns a golden color. Be patient—this may take a few minutes.
2. Once the butter is golden, stir in the fish sauce and continue mixing until its aroma has completely cooked out. This acts as our salt.
3. When the fish sauce aroma dissipates, add the large marshmallows, ensuring the heat remains on low. Stir occasionally until the marshmallows are fully melted and smooth.
4. Once the marshmallows are completely melted and gooey, mix in the vanilla extract until well incorporated.
5. Add the Rice Krispies and gently fold them into the mixture until evenly coated. (The amount of cups depends on how gooey you want your treats to be; I used 6 1/2 cups).
6. Turn off the heat and let the mixture cool slightly before adding the mini marshmallows, sprinkles, and chocolate pieces. Save some for decoration later. Gently fold everything quickly together (you want the mini marshmallows to still be whole and not melted).
7. Transfer the mixture to a parchment-lined baking dish. Use the parchment paper to gently press down the Rice Krispies to set—be careful not to press too hard, or the treats may become too firm.
8. After a few minutes, use cookie cutters to shape the treats or cut them into squares. Decorate the tops with extra mini marshmallows, sprinkles, and chocolate pieces.
9. Enjoy immediately, or wrap each treat individually in plastic wrap for later!
