Cheesesteak Eggrolls

From this day forward, I choose cheesesteak egg rolls over a cheesesteak sandwich; The crisp of the egg roll is insanely addicting and to top it off, the entire recipe is so easily made in the airfryer! This is such a great appetizer idea and the fillings can easily be customized! I created a very simple version today, but feel free to elevate the recipe with mushrooms, green bell peppers, and onions! YUM. PS: The dipping sauce is the perfect balance of tang and spice to neutralize the savory steak. If you try this, please tag me; I LOVE seeing your foodie photos !!!

What you’ll need:

Servings: 3

  • 1lb thin sliced rib-eye

  • package of egg roll wrappers

  • 2 cups shredded provolone cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • salt

  • black pepper

  • 1 cup water or 1 beaten egg

  • 1 cup greek yogurt

  • 1 garlic clove

  • 2 tsps lemon juice

  • 1 tsp chili flakes

  • 1 tsp fresh chopped parsley (optional)

  • olive oil (or butter)

Instructions:

  1. Start off by prepping steak—Add thinly sliced ribeye to a mixing bowl and season with garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

  2. Airfry seasoned steak at 400F for about 5 minutes.

  3. While steak is air frying, prep dipping sauce— Combine greek yogurt, pressed garlic clove, lemon juice, chili flakes, chopped parsley, salt, and black pepper. Mix well and set to the side.

    *You can also sub greek yogurt with mayonnaise or sour cream

  4. Remove steak from airfryer and let cool for at least 5 minutes before assembling egg rolls.

  5. Prep assembly stations—

    A. 1 cup of water or 1 beaten egg (egg wash) for lining edges of egg roll wrapper

    B. Shredded cheese

    C. Chopped up steak . (I used kitchen shears to cut into smaller pieces)

  6. Make egg rolls— Place down one egg roll wrapper on a flat surface and line all four corners with water or egg wash. Add some steak to the middle and double the amount of shredded cheese.

    *You want a 1:2 ratio of steak to cheese

  7. Gently roll and tuck egg roll tightly as possible. Seal egg roll tip with more water or eggwash. Repeat until all steak is used.

  8. Make sure the bottom of your airfryer is greased and line up egg rolls in one even single layer without overcrowding . Use a basting brush to brush each egg roll with olive oil or melted butter (you can also use the rest of your egg wash instead of olive oil here).

  9. Airfry eggrolls at 400F for about 10 minutes or until slightly golden and crispy. (If you used egg wash to brush egg rolls, egg rolls will have a more darker golden color). Make sure you flip halfway and don’t forget to brush the other side with olive oil/egg wash too.

    ***This temperature will depend on your airfryer and how many egg rolls you have cooking at one time. If you have an extra hot airfryer or cooking less egg rolls, lower temperate to 380F; or else eggrolls can explode.

  10. Transfer cooked egg rolls to a serving plate and serve with dipping sauce. Let cool for about 5 minutes before enjoying!
