Cauliflower Mash Famous Bowls (KFC Copycat)

In high school, my friend and I would always crave famous bowls from KFC. There was just something so satisfying about the creamy mashed potatoes topped with sweet corn kernels and crispy popcorn chicken, paired with that delicious salty gravy and melted shredded cheese! Fast forward 10+ years later, I suddenly had the urge for a famous bowl—- I knew my metabolism wouldn’t be able to handle all those extra calories so I decide to make a homemade and “healthier” version and it turned out absolutely AMAZING. It tasted just how I remembered, but just guilt free!! The cauliflower mash was a great substitute as its texture is similar to mashed potatoes; You wouldn’t even know it was vegetables you were eating! TRY THIS ONE OUT, you won’t regret it!

What you’ll need:

Servings: 4

  • 2-3 large chicken breasts

  • 2 tsp paprika

  • 2 tsp garlic powder

  • salt

  • black pepper

  • 1 cup almond flour

  • 1 egg

  • 24oz cauliflower rice

  • 1/4 cup milk

  • 4oz cream cheese

  • 2 cups chicken/ or beef broth

  • 2 tsps cornstarch

  • 1 cup corn

  • 1 cup shredded cheese

Instructions:

  1. Start off by prepping chicken breasts

    -Rinse and pat dry

    -Cut into small bite sized cubes

  2. Place chicken cubes into a mixing bowl and season with 1 tsp each of paprika and garlic powder. Season with salt and black pepper to taste. Combine well and set aside.

  3. To another separate bowl, crack one egg and beat until egg is smooth. Transfer beaten egg to chicken cube mixing bowl and combine well. Set aside.

  4. To a shallow dish, add 1 cup almond flour and season with 1 tsp each of paprika and garlic powder. Season with salt and black pepper to taste.

  5. Take one chicken cube at a time and coat in the seasoned almond flour. Shake off any excess.

  6. Place chicken into airfryer in a single layer and air fry at 400 for about 8-10 minutes. Shake halfway though. Chicken cook time will vary— chicken should reach an internal temperate of 165. Repeat until all chicken is cooked though and set aside.

  7. Prepare cauliflower rice ( I used premade Kirkland frozen cauliflower rice).

    -To a medium-hot pan, stir fry cauliflower rice until soft. Season with salt and black pepper to taste once cauliflower is cooked though.

    -Transfer cooked cauliflower to a food processor and add 1/4 cup of milk and 4oz cream cheese

    -Blend until cauliflower is smooth and has the consistency of mashed potatoes. Add more milk if not creamy enough.

    -Set aside.

  8. Prepare gravy

    -Heat up 2 cups beef/ or chicken broth

    -In a separate mixing bowl, combine 1/4 cup water and 2 tsps cornstarch. Mix until well combined and cornstarch is dissolved..

    -Pour cornstarch water into boiling broth and reduce heat to medium-low. Stir until thickened. Taste and season with salt and black pepper if needed.

  9. Prepare your “famous bowls” !

    -To a serving bowl, add cauliflower mash

    -Top with corn

    -Top with popcorn chicken

    -Drizzle gravy over

    -Top with shredded cheese. (I used mozzarella).

  10. Enjoy right away!
