Cambodian Style Cucumber Salad (Entire Cucumber Trend)

This recipe is one of my faves for a hot summer day— its cool, refreshing, with a zing ! I was inspired to remake it because Logan’s “entire cucumber” recipe was going viral, so I thought id share my take on that trend !

What you’ll need:

Servings: 1-2

  • 1 extra long English cucumber

  • 1 lime

  • 1 tsp fish sauce

  • 1-2 thai chili peppers

  • 1 tsp ground thai chili powder (optional)— sub for chili flakes

  • 1 large clove garlic

  • 1 tsp fried garlic chips

  • 1 tsp sugar

  • 2 tsp tamarind soup powder

  • 1/2 tsp coarse salt

  • chopped cilantro

  • sliced green onions

  • 3 tsps sour cream

Instructions:

*Make sure all veggies/ingidients are clean and dry

  1. Start off by slicing cucumber into 1/2in-1in thick slices .

  2. Place cucumber slices into a large mixing bowl

  3. To the mixing bowl— Add in fresh squeeze lime juice, fish sauce, minced thai chili peppers, thai chili powder or chili flakes, pressed or grated fresh garlic, fried garlic, sugar, tamarind soup powder, chopped cilantro, sliced green onions, coarse salt, and sour cream . Mix well to combine .

  4. Enjoy right away !
