Basil Thai Chili Chicken and Green Beans

This is such a savory and bright dish. I love making this on weeknights that I need to make dinner that’s easy and delicious. The sunny side up egg on top is the icing on the cake— if you try this, tag me ! I love seeing your foodie photos (:

What you’ll need:

Servings: 3

  • 2 large chicken breasts

  • 1 tsp soy sauce

  • 1 tsp fish sauce

  • 1 tsp oyster sauce

  • 1 tsp honey

  • black pepper

  • thai chili peppers

  • fresh basil (thai or Italian works fine)

  • 4 garlic cloves minced

  • 1 tsp olive oil

  • 1 cup frozen green beans

  • 1 egg (optional)

Instructions:

*Make sure all protein and veggies are washed thoroughly and pat dry

  1. Start off by slicing chicken breasts into bite sized slices— place slices into a mixing bowl and season with soy sauce, fish sauce, oyster sauce, honey, and black pepper. Mix well and set aside.

  2. Mince garlic and coarsely chop thai chilis — use as many or as little chilis here to your liking — set aside.

  3. Add about a tsp of olive to a skillet pan and turn heat up to medium-high. Once pan is hot, add in garlic and thai chilis— stir fry until fragrant and then add in marinated chicken.— Continue stir frying until chicken is 75% cooked though and then add in frozen green beans— continue stir frying until chicken is completely cooked though.

  4. Turn off heat and add in fresh basil leaves. Transfer to a serving dish.

  5. Fry up an egg sunny side style and place on top go chicken plate. Break yolk to distribute .

  6. ENJOY as is or over a bed of rice !
