Broken Yolk Pate Toast

This toast recipe was inspired by asian flavors similar to a banh mi sandwich— I took the broken yolks and dressed them with cilantro, spicy mayo, and pate and it really was next level! If you try this, tag me; I love seeing your foodie photos (:

What you’ll need:

Servings: 2

  • 2 slices of bread (I like sourdough)

  • 4 eggs

  • fresh cilantro

  • 4 tsps pate

  • 4 tsp japanese mayo

  • 4 tsps sriracha

  • salt

  • black pepper

  • butter or mayo for toasting bread

Instructions:

  1. Start off by placing eggs in airfryer basket and “airboil” eggs a 375F for about 6-7 minutes for a soft/medium egg yolk— While eggs are “airboling”— prep toast and cilantro.

  2. Spread a little bit of butter or mayonnaise to each side of your toast and heat up a skillet pan on medium-low heat. Toast each side for about 1-2 minutes or until toast is golden to your liking. Turn off heat and transfer to a serving dish.

  3. Once eggs are done “airboling” — transfer them right away to an ice bath or a bowl filled with water and ice. Let me cool for at least 10 minutes to let yolks firm up and become “jammy”.

  4. Rough chop cilantro and set aside.

  5. Peel eggs and transfer to a mixing bowl and carefully rough chop with a butter-knife to break egg yolks and cut egg whites — season with Japanese mayo, sriracha, salt, black pepper, and chopped cilantro— mix well.

  6. To each slice of toast, spread some pate and add spoonfuls of egg mixture on top of toast. Add more sriracha on top and enjoy !
