Peanut Butter Banana Bread

What you'‘ll need:

Servings 6-8

  • 3 over ripe bananas

  • 2 eggs

  • 1 T vanilla extract

  • 1/2 cup olive oil OR melted butter (one stick)

  • 2 T peanut butter

  • 2 cups almond flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • salt

  • walnuts

  • dark chocolate chips

Instructions:

  1. Start off by peeling bananas and placing them in a mixing bowl(A)

  2. Use a fork, or a potato masher to break bananas down and turning them into “mush”

  3. To same mixing bowl(A), Crack 2 eggs, add in vanilla extract, olive oil(or melted butter), and peanut butter. Mix well. Set aside.

  4. To another separate mixing bowl(B), add almond flour, baking soda, cinnamon, and a pinch of salt. Combine well.

  5. Add dry ingredients mixing bowl(A) into the wet ingredients bowl(B), and combine well until smooth.

  6. Pour bread batter into a parchment paper lined loaf baking dish (or greased loaf baking dish) .

  7. Top with crushed walnuts and dark chocolate chips

  8. Bake in preheated oven at 350F for about 50 min- 1 hr.

    -Check doneness by sticking chopstick in the middle and if it comes out clean, its COOKED!

  9. Remove from oven once done and let cool for about 10 minutes before slicing!

  10. Enjoy! Its PERFECT on its own, or top with ice cream for a sweet treat!
