Salmon Cucumber Bites
This quick and easy filling appetizer or snack idea is sure to satisfy any palette! Love how savory the salmon is combined with the fresh cucumbers. The cream cheese and furikake really tie in the flavors, so those are a must! These bites remind me of a deconstructed sushi roll… similar to a philadelphia roll!!
instructions:
Start by prepping salmon. Rinse and pat dry, remove skin.
Cut salmon into bite sized cubes and place in mixing bowl.
To salmon mixing bowl, season with mayo, sriracha, salt, and black pepper. Combine well .
Airfry salmon bites in single layer at 370 for about 15 minutes.
While salmon is air frying, prepare cucumbers.
Rinse and slice cucumbers at diagonal to create a larger surface. Pat dry and set aside.
Once salmon is golden and crispy(but still juicy), set aside to cool for about 5 minutes.
Once salmon is slightly cooled, start assembling cucumber bites
Grab one diagonal slice and smear a little bit of cream cheese on top, place salmon cube on top, and secure with toothpick
Continue assembling cucumber bites until all done.
Transfer all cucumber bites to a serving dish and dab a little sesame oil on top of each salmon cube.
Finish by sprinkling furikake on top !
