Shrimp Cucumber Bites

This shrimp salad bite is so refreshing and will hit the spot on a bright and summery day. The zesty lime notes paired with the spice of the fresh jalapeños are oh so pleasing on your tastebuds. Serve it up on a thick slice of cucumber and you got yourself an energizing snack or appetizer .

What you’ll need:

  • 1-2lbs shrimp

  • salt and pepper to taste

  • 1 large tomatoe

  • 1-2 fresh jalapenos

  • 1 large avocado

  • 2-3 fresh limes

  • cilantro to taste

  • Valentina or tapitio hot sauce

  • 2 large cucumbers

Instructions:

  1. Prepare your shrimp and season with salt and pepper

  2. Airfry shrimp at 390 about 10 minutes

  3. Cut tomatoes, avocado, and jalapeños into small bite sized pieces

  4. Once shrimp is cooked, cut into bite sized pieces or leave whole

  5. Combine shrimp and vegetables in large bowl

  6. Squeeze lime juice, add hot sauce, and chopped cilantro; Mix well

  7. Let set in fridge for about 30 minutes for flavors to set

  8. Enjoy with fresh cucumbers, crackers, or chips!
