Salmon Tacos with Mango Salsa
Such a great idea for taco Tuesday at home! I love how easy and delicious this dish comes out and is easily customizable to the size of your family! The mango salsa is so bright and refreshing. The salmon is crisp on the outside due to the mayonnaise and juicy on the inside! I used store bought guacamole and hot sauce for this recipe to save some time, but feel free to make your own if you’d like! Tag me if you remake this one !!
Instructions:
Start off by preparing mango salsa:
-Rinse and pat dry mango, tomatoes, limes, and cilantro.
-Remove skin from mango and cut into small bite sized pieces. Add to a mixing bowl.
-Cut tomatoes into small bite sized pieces and add to same mixing bowl.
-Chop cilantro and add to same mixing bowl.
-Squeeze the juice of one lime into same mixing bowl. Adjust to taste.
-Season with salt and black pepper. Combine gently.
-Set in fridge and finish the rest of the recipe.
Prep salmon:
-Rinse, pay dry and season .
-Using a basting brush, “paint” salmon with mayonnaise until completely covered.
-Season with garlic powder, old bay, salt, and black pepper.
-Airfry at 370 for about 7-10 minutes.
-Remove from airfryer and let cool while preparing tortillas.
Warm up tortillas to desired liking and place on serving dish.
Assemble tacos by placing one tortilla down, followed by a spoonful of guacamole, then a piece of salmon, mango salsa, and then your favorite hot sauce. Squeeze more lime juice on top if you’d like !
