Instructions:
*Pre-heat oven to 350F
Start off by combining chopped spinach, parmesan, Rotel diced tomatoes, mozzarella, softened cream cheese, greek yogurt, garlic powder, tiny pinch of salt salt, and black pepper in a large bowl— mix well. Set aside.
“Pop” open pre-made biscuit dough (I used pillsbury) and cut each biscuit in half. Using your hands, roll each piece into a “ball” shape.
Grease a cast iron skillet with olive oil or melted butter and line the dough balls along the outer circle of skillet.
Transfer spinach cheese mixture to the middle of the cast iron skillet, careful to not cover the dough balls.
Melt butter, pressed garlic cloves, and Hunt’s tomato paste over high heat on a skillet pan—Whisk tomato paste until everything is well combined and paste is broken down. Transfer to a small bowl.
Using a basting brush, brush the tops of biscuit dough with garlic-tomato butter.
Bake in a preheated oven at 350F for about 30 minutes or until dough balls are cooked through and spinach dip is warmed though. (Add more mozzarella cheese on top for the last five minutes if you’d like.)
Enjoy !
