Pizza Stuffed Bell Peppers
Whenever i’m craving pizza without the extra carbs, I make these pizza stuffed peppers and it always satisfies ! The best part about this recipe is that everything is completely customizable! My family loves mushrooms, but feel free to use what you like! We love the crunch bell peppers give, but if you’d like a more tender bell pepper you can parboil them for about 5 minutes before stuffing!
Instructions:
*Prep all veggies by washing and patting dry.
Start off by prepping ground turkey
-Remove ground turkey from packaging and transfer to a mixing bowl
-Season with oregano, rosemary, chili flakes, salt and black pepper. Set aside.
Chop vegetables into small pieces . Save fresh basil for garnish at the end .
-Add in chopped onion, mushrooms, and garlic cloves. Combine well.
Add about 1 tsp of olive oil to a skillet pan and stir fry ground turkey mixture on high heat until ground turkey is cooked though and most of the liquid is gone.
-Once ground turkey is cooked though, add about 1/2 cup of marinara and mix well. (Save the other 1/2 cup marinara for topping later)
-Let ground turkey cool while you prep bell peppers
Preheat oven to 400F and Prep bell peppers
-Cut the tops off each bell pepper and then cut in half. Revealing 2 bell pepper “boats”.
-Remove any stems and seeds and discard.
-Optional- you can chop up bell pepper tops and add to ground turkey mix if desired. (I discarded mine because its too much bell pepper flavor for my fam)
Stuff peppers
-Grab a bell pepper half and sprinkle some cheese on the bottom
-Stuff bell peppers with cooked ground turkey mixture
-Add a spoonful of marinara on top
-Followed by more cheese
-Repeat until all bell peppers are stuffed
-Transfer stuffed bell peppers to a baking pan lined with a wired rack
-Bake in the oven at 400F for about 30 minutes or airfry at 375 F for about 20 minutes
Once cheese is golden and melted through, remove from oven and garnish with fresh sliced basil
Let cool for about 10 minutes before enjoying!
