Peanut Butter Chocolate Cake

My daughter’s love for baking came at a very young age— she was always a huge help in the kitchen ever since she realized that she could make her own cookies at home from scratch! She used to have her own baking channel during the pandemic— maybe she’ll start back up again soon ? This peanut butter chocolate cake is sure to please the peanut butter lover’s palette— its actually not too sweet and not overpowering. I love how moist it turns out; I almost could say its almost like a moist muffin instead of a sugary cake— we LOVE it. If you try this, send us foodie photos ! What you’ll need:

Servings: 8-10

Cake:

  • 1 1/4 cups flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup olive oil

  • 1/2 cup peanut butter

  • 1 cup brown sugar

  • 1 egg

  • 1/3 cup greek yogurt (or sour cream)

  • 1 1/2 tsps vanilla extract

  • 3/4 cup whole milk

Frosting:

  • 1 cup unsalted butter

  • 3 1/2 cups powdered sugar

  • 1/2 cup cocoa powder

  • 3 T milk (or heavy cream)

  • 1/3 cup peanut butter

  • 1 tsp vanilla extract

  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 350F.

  2. Prep cake— to a mixing bowl, add flour, baking soda, salt, and whisk well. Set aside.

  3. In a separate mixing bowl, combine oil, peanut butter, brown sugar, egg, greek yogurt, and vanilla extract. Mix well.

  4. Slowly add in the dry ingredients into the wet and continue whisking until everything is well combined— batter should be slightly thick.

  5. Pour the batter into a heart shaped pan and bake in the oven for about 20-25 minutes— insert a toothpick in the middle at the 20 minute mark— if it comes our clean, its ready. Remove from oven and let cool completely before frosting.

  6. Prepare frosting— Whisk softened butter until completely smooth. Then add in powdered sugar, cocoa powder, and milk. Continue whisking for another 30 seconds- 1 minute, then add in peanut butter, vanilla extract, and salt. Whisk again for another 1-2 minutes until everything is well combined. (Throw into freezer for about 5 minutes if frosting is too thin.)

  7. Frost cake and enjoy !
