Mushroom Scallop Chili Oil Noodles (Easy Sauce Recipe)
You know i’m always here for an easy and tasty 30 minute meal ! Today im trying out these store-bought potato noodles I found at my local H Mart asian market and I decided to whip up one of my favorite sauces to make when it comes to a situation like this where there are no seasoning packets in the store-bought noodle package ! This savory and spicy soy based sauce is perfect for any type or noodle or even as a dipping sauce for dumplings or egg rolls— you need to try my recipe out and feel free to customize the protein and vegetables to your liking !
What You’ll Need:
Servings: 2
12oz package of Potato Noodles (or any noodles of choice)
1 cup sliced mushrooms
1 cup mini scallops
2 tsps soy sauce
2 tsps oyster sauce
1 tsp sesame oil
2 tsps sweetened black vinegar
2 tsps chili oil of choice (I used store-bought)
1 fresh thai chili pepper (optional; for extra spice)
1-2 garlic cloves
sliced green onions
chopped cilantro
Instructions:
1. Prepare the Noodles: Cook the noodles according to the package instructions.
2. Cook the Mushrooms: While the noodles are boiling, heat a shallow pan over medium-high heat. Add the clean and dry sliced mushrooms and let them cook undisturbed until they develop some color. Stir-fry for a few minutes, season with salt if desired, then remove from heat.
3. Drain the Noodles: Check the noodles, drain, and rinse them. Set them aside.
4. Sear the Scallops: In a clean shallow pan, heat some olive oil over medium-high heat. Once the oil is hot, add the clean and dry scallops. Sear them on each side for a few minutes until they develop a golden crust. Remove from heat.
5. Combine Ingredients: In a large serving bowl, add the drained noodles. Pour in soy sauce, oyster sauce, sesame oil, black vinegar, and chili oil . Add in chopped Thai chili, sliced green onions, pressed garlic cloves, the seared mushrooms, and scallops— mix well to combine.
6. Garnish and Serve: Garnish with fresh chopped cilantro and enjoy right away !
