The last time I shared my salmon sushi bake recipe, it went completely viral (over 5.5+ MILLION views!!)—so I thought id share another version mini version, done easily in the airfryer !
What You’ll Need:
Servings: 6
6 ramekin cups
6oz imitation crab
6oz canned tuna
4oz baby scallops
Japanese mayo
sriracha
ponzu
sesame oil
masago
unagi sauce (eel sauce)
4oz cream cheese
3 cups cooked rice
furikake
rice wine vinegar
sliced green onions
sesame seeds
seaweed snacks
sliced cucumber
sliced avocado
Instructions:
*Clean and prep all veggies
1. In a large mixing bowl, combine imitation crab, drained tuna, and baby scallops. Add equal parts Japanese mayo and sriracha, adjusting the sriracha to your spice preference. Then, mix in cream cheese, 2 teaspoons of ponzu, 1 teaspoon of sesame oil, and as much masago as you like. Stir everything together until well combined.
2. In another large mixing bowl, season cooked rice with 1-2 teaspoons of rice wine vinegar. You can also add some sugar if you prefer. Mix well, then press 1/2 cup of the seasoned rice into each ramekin, using the back of a measuring cup to flatten it down.
3. Sprinkle furikake seasoning over the flattened rice.
4. Add a scoop of the seafood mixture on top of the rice and flatten it down.
5. Drizzle Japanese mayo, sriracha, and unagi sauce over the seafood layer, and sprinkle with sesame seeds.
6. Air fry at 350°F for about 10 minutes, or until the tops are golden and heated through.
7. Garnish with chopped green onions and serve with seaweed snacks, sliced cucumber, and avocado. Enjoy!
