Lemongrass Shrimp Vermicelli Bowls

Lemongrass shrimp vermicelli bowls are going to be your next favorite summer salad. It is so bright, refreshing, and best of all.. DELICIOUS. The dressing that is used for this recipe is also very versatile and can be used in many different ways. My family also likes using the dressing as a dip for steak/chicken ! The herbs are very important to this dish as it gives it the nice bright flavors. Sometimes when Im not in the mood to drive to my local asian market to grab noodles, id just make a salad bowl and it satisfies the craving of the perfect bite… sweet, salty, spicy, tangy!

What you’ll need:

Servings: 2-4

  • 1 romaine lettuce head

  • 1 lb jumbo shrimp

  • 1 tsp lemongrass

  • 1 tsp fish sauce

  • 1/2 tsp honey

  • 1 tsp garlic powder

  • fresh mint

  • fresh basil

  • package of dried vermicelli noodles

  • 1/8 cup peanuts

  • 1 large cucumber

  • mortar and pestle

    Sauce Ingredients:

  • 1/2 cup water

  • 1/2 cup fish sauce

  • 1 lime

  • 1 tsp sugar or sweetner

  • 6 garlic cloves

  • 1/2 shallot (optional)

  • thai chili peppers

Instructions:

  1. Start off by prepping sauce/dressing

    -Add equal parts water and fish sauce to a mason jar or container with lid

    -Add sugar and lime juice and adjust to your liking.

    -Finely chop up garlic, shallot, and Thai chili peppers and add into jar. Combine well. Set aside.

  2. Prep vegetables

    -Rinse and dry all vegetables and herbs

    =Cut romaine lettuce into shreds.

    -Julienne cut cucumbers into long bite sized slices.

    -Roll up herbs and slice into thin long pieces.

    -Set aside.

  3. Prep shrimp

    -RInse, dry, remove shell/tail, and devein.

    -Add shrimp to a mixing bowl and season with lemongrass (I used frozen precut), fish sauce, garlic powder, and honey. Combine well and let marinate for about 10 minutes. (Work on noodles while this is marinating).

  4. Prep noodles if using dried/pre-made:

    -Bring water to a boil in a medium pot and place dried noodles in.

    -Let boil for about 5-8 minutes or based off instructions on the package.

    -Remove and drain. Set aside.

  5. Transfer marinated shrimp to air fryer. Airfry shrimp in one single layer on 370 for about 7-10 minutes. (Work on peanuts while shrimp is air frying).

  6. Prep roasted peanuts:

    -To a medium-hot pan add in peanuts and roast for about 1 minute or until peanuts have some color.

    -Remove from heat and transfer to mortar and pestle

    -Pound until peanuts are completely crushed and from a course powder.

    -Transfer to bowl and set aside.

  7. To assemble:

    -To a serving bowl, add some vermicelli noodles down dow. first followed by shredded lettuce.

    -Then add cumbers, handful of herbs, and shrimp.

    -Ladle in some sauce/ dressing on top.

    -Garnish with some crushed roasted peanuts

  8. To enjoy, mix all contents together and take a big bite! YUM.
