Lemon Pepper Dill Cod (Airfryer Foil Packets)
This easy date night-in air fryer foil packets are my go-to when I want to make something easy that looks gourmet . Im using cod today, but it works with any type of fish (salmon, tilapia, etc.). The lemon pepper and dill compliment fish so well—- this is a must try even if its not for datenight-in !
Instructions:
Start off by prepping cod— clean, pat dry.
Season cod with ground mustard , onion powder, l.emon pepper, mushroom seasoning, chopped garlic, and salt if needed.
Using a grater, grate lemon peel to get about 2 tsps lemon zest. Add to cod and mix well until seasonings are well incorporated .
Lay down one sheet of foil at a time and add a layer of sliced zucchini (season zucchini if desired). Followed by seasoned cod, fresh dill leaves, slice of lemon, and a pat of butter .
Now, create a packet by folding over the foil over fish contents and sealing shut . Repeat until all fish packets are made .
Airfry foil packets at 400F for about 15-20 minutes or until fish is cooked through.
*You can also bake in a preheated oven 400F for about 20 mins .
Once fish is tender and cooked through, remove from air fryer and enjoy from foil packet or transfer to a serving plate . ENJOY !
*be careful when opening foil packet as it contains very hot steam and juices
