Lazy Gurl Fried Rice

I make this when I need something good to eat, but i’m too lazy to cook LOL—- try it, its fire. Love the balance of sweet and salty— its completely customizable, add some crispy chopped bacon and mmmmm chefs kiss !

What you’ll need:

Servings: 2

  • 1 1/2 cups day-old cooked rice

  • 4 eggs

  • 1 tsp fish sauce (or soy sauce)

  • 1 tsp monk fruit sweeter (or sugar)

  • black pepper

  • 1/4 cup frozen peas

  • frozen corn and carrots (optional)

  • sriracha hot sauce

  • 1 tsp olive oil

Instructions:

  1. Add day old rice to a mixing bowl and crack 4 eggs directly on top— season with fish sauce, sweetener, and black pepper. Combine well.

  2. Add 1 tsp olive oil to a skillet pan and heat up to medium-high. Once pan is hot, add in frozen green peas and corn/carrots if using . Stir fry for about 15 seconds and then add in egg/rice mixture.

  3. Lower heat to medium-low and do not disturb egg/rice mixture for about one minute to allow egg to brown and have some color— continue stir frying until egg is cooked to your liking.

  4. Transfer to a serving plate and drizzle with sriracha—enjoy !
