Eggs w/Chinese Sausage— EP.1 Fav Childhood Meals

If you ever interview my parents and ask them what my all time favorite comfort meal was, this scrambled eggs with Chinese sausage over rice was my go to— Id ask for it almost every day until my mom told me I was turning into an egg from eating only this dish LOL. What you’ll need:

Servings: 3-4

  • 6 eggs

  • 5 Chinese sausages (sliced)

  • 1 & 1/2 tsps fish sauce

  • 1 & 1/2 tsps sugar or sweetener of choice

  • black pepper or white pepper

  • 1/4 cup (chopped) green onions

  • sriracha (optional)

  • hot Maggie seasoning (optional)

  • cooked rice

Instructions:

  1. Start off by cracking eggs into a mixing bowl— season with fish sauce, sugar, chopped green onions, and black pepper. Whisk to combine completley— set aside.

  2. Heat up a nonstick skillet pan to medium-high and add in sliced Chinese sausage. Continue stir frying until sausages have some color, then add in scrambled eggs mixture and lower heat to medium-low.

  3. Let eggs simmer for about 30 seconds and then using chopsticks, start to push in each side of the omelette almost creating a “flower effect. Turn off heat completley and let eggs set to your liking.

  4. Transfer some eggs and sausages to a serving bowl over steaming hot rice and drizzle sriracha and hot Maggie seasoning on top— enjoy .
