Egg Stuffed Avocado

Don’t knock it til you try it— haver you ever not had a carnesada burrito with guacamole?— this is kind of a similar thing ! Love having this for a quick, easy air fryer breakfast. Today I used whatever was leftover in my fridge, which was steak— but you can honestly substitute with any proteins that you’d like. Ive made this with crisp crushed up bacon before and it was booooomb . If you try this, let me know how you like it !

What you’ll need:

Servings: 1

  • 1/2 large avocado

  • Salt

  • black pepper

  • 1 egg

  • leftover steak (or sub with bacon)

  • 1-2 tsps pesto

  • chili flakes

  • 1-2 tsps shredded mozzarella

Instructions:

  1. Start off by slicing avocado in half and removing the pit— save the other half for another recipe. ( If you avocado has a small pit, scoop some of the avocado out to make room for the egg) .

  2. Season avocado half with salt and black pepper — or any other seasonings of your choice

  3. Place avocado into air fryer basket and carefully crack in your egg right into the pit. Place sliced leftover steak in air fryer basket as well, and gently close air fryer basket to avoid egg from spilling.

  4. Airfry contents at 400F for about 5 minutes or until steak is warmed up to your liking and egg is about a medium soft yolk— at this point you can remove crisp steak bites and top avocado egg with shredded mozzarella.

  5. Continue air frying avocado egg at 350F for about 5-7 more minutes or until egg is cooked to your liking and cheese is melted through.

  6. Carefully remove avocado egg from air fryer and transfer to a serving dish. Place crisp steak bites on top followed by a teaspoon or two of pesto and chili flakes.

    *I used store bought pesto for convenience, but feel free to make your own at home!

  7. Wait a few minutes to cool before enjoying! Bon Appetite!
