Cucumber Yogurt Dip

This is the most refreshing and light yogurt dip ever… and super easy to make!. I love how much flavor is jam packed throughout. The grated cucumber and its juices really make it nice and crisp. The garlic flavor is just enough, and the lemon juice gives it a nice zing. I love using fresh parsley as it gives it a nice color and the fresh dill gives it the perfect bright pop of flavor! Try this as a dressing drizzled over chicken shawarma, or eat it in its own as a chip or veggie dip!

What you’ll need:

Servings 3-6

  • 1 cup plain greek yogurt

  • 2 Persian cucumbers

  • 3-5 garlic cloves (preference)

  • 1 lemon

  • parsley

  • dill

  • salt

  • black pepper

Instructions:

  1. Rinse and dry cucumbers

  2. Chop fresh parlsey

  3. Chop fresh dill

  4. Add greek yogurt to a mixing bowl

  5. To yogurt mixing bowl:

    -Grate Persian cucumbers until finely shredded

    -Using a garlic press, press garlic cloves

    -Slice lemon and squeeze juices in

    -Add parsley and dill about 1 tsp-1 T of each herb. (amount is based off your taste)

    -Season with salt and black pepper to taste

  6. Combine well, and enjoy over your favorite chicken shawarma salad, or as a dip on its own !
