Fish Sauce Eggs (Seasoned Soft Boiled Eggs)

Here’s my non-traditional spin on a classic marinated egg recipe that i’ve been loving since I was a kid ! These seasoned soft boiled eggs are delicious over rice, in a bowl of noodles, or even on toast ! The liquid is literally gold— it's a similar base to my ultimate dipping sauce, and you already know its flavorfulllll . Pour a little over your rice or even save it for your next salad dressing . What You’ll Need:

  • 10oz container

  • 6 eggs

  • 2 T fish sauce

  • 1 small shallot

  • 1 lime

  • 4-6 garlic cloves

  • 1 tsp sweetener of choice (sugar, honey, etc.)

  • Thai chili peppers

  • 2 stalks green onions

  • 4-6 cilantro sprigs

  • cooked rice (optional)

  • cucumber (optional)

Instructions:

1. Bring a large pot of water to a boil. Carefully add the eggs and boil for 6 ½ minutes. Then, place the eggs in an ice bath for at least 30 minutes to cool, which will give them a jammy texture.

2. While the eggs cool, finely chop the shallot and garlic. Stir-fry them until golden and fragrant, then set aside.

3. In a small container, mix fish sauce, lime juice, sweetener of your choice, chopped Thai chili peppers, green onions, and cilantro. Once the garlic and shallots have cooled, add them to the container.

4. Once the eggs have cooled for at least 30 minutes, peel them and place them in the container with the sauce. Add enough water to cover the eggs, then refrigerate overnight to develop a golden color.

5. The next day, enjoy the eggs over rice, noodles, or salad, using some of the sauce as dressing. Enjoy!
