Cajun Chicken with Charred Mini Sweet Peppers

This is such an easy and delicious meal idea and is SUPER easy to make all done in your air fryer. The chicken thighs stay juice and the seasonings are savory, zesty, and oh so flavorful ! Airfrying the mini sweet peppers give it a nice charred, almost like blistered pepper look and the smokinesss is just amazing and pairs so well. What you’ll need:

Servings: 3-4

  • 6 chicken thighs

  • 8oz bag sweet mini bell peppers

  • 1 oz lemon juice

  • 1 tsp garlic salt

  • 2 tsp old bay seasoning

  • 2 tsp onion powder

  • 1 tsp tony’s seasoning

  • black pepper

  • salt

  • 1 tsp olive oil

Instructions:

*Make sure all protein and veggies are washed and pat dry

  1. Prep chicken— place chicken thighs in a large mixing bowl and season with lemon juice, garlic salt, old bay, onion powder, Tonys, and black pepper— mix well and set aside. If you have time, let marinate for at least 10 minutes.

  2. Place mini bell peppers in a separate mixing bowl and season with olive oil, salt, and black pepper. Airfry in one even single layer at 400F for about 10-12 minutes or until skin of peppers start to char and blister. Be sure to flip peppers halfway through cook time. Transfer blistered peppers to a serving dish.

  3. Airfry chicken thighs at 400F for about 20 minutes and be sure to flip them halfway through cook time . Once chicken internal temp reaches 165FG, remove from air fryer and transfer to a serving dish.

  4. To enjoy, eat chicken thighs with bell peppers; If you want, you can also eat over a bed of rice or with a salad !
