Buffalo Shrimp Salad

This is a super easy, healthy, and delicious meal idea— I love topping the spicy and tangy shrimp over some romaine or baby spinach with tomatoes and extra black pepper; If Im feeling fancy, ill even add some fresh grated parmesan— YUM.

What you’ll need:

Servings: 2

  • 2 lb shrimp- peeled and devined

  • 1/2 tsp garlic salt

  • 1/2 tsp dry ranch seasoning

  • 1/2 tsp onion powder

  • 1-2 heads romaine lettuce

  • 1 cup baby tomatoes

  • 1/2 lemon

  • 1 tsp olive oil

  • salt

  • black pepper

  • 2 tsps cream cheese

  • 2 tsp Louisiana style hot sauce

Instructions:

*Make sure protein/ veggies are washed and dried

  1. Place shrimp in a mixing bowl and season with garlic salt, dry ranch seasoning, and onion powder- mix well

  2. Airfry shrimp at 390F for about 5 minutes or until cooked to your liking

  3. While shrimp is airfrying- dress lettuce. In a large mixing bowl add in chopped romaine lettuce and dress with olive oil, lemon juice, salt, and black pepper- toss to combine and set aside.

  4. Transfer cooked shrimp to a mixing bowl and while shrimp is still hot, add in cream cheese and Louisiana style hot sauce- mix until cream cheese is creamy and shrimp are coated. ( you can also sub cream cheese with greek yogurt or mayonnaise)

  5. Assemble- add dressed lettuce to a serving plate and top with shrimps, baby tomatoes, and extra black pepper. Enjoy !
