Chipotle Black Bean And Cheese Quesadillas

Even a black bean-hater would love these cwispy airfryer quesadillas— there’s just something about combining the textures that makes this the perfect bite. I love how this recipe is jammed packed with protein and even my picky kids love this one! The black beans are smoky, flavorful, and has a nice touch of spice. You can use any cheese that you’d like— today I used Colby jack, but i’m sure it would be delicious with Monterrey or even mozzarella. Love using greek yogurt for dipping sauce for extra protein! What you’ll need:

  • 15 oz organic black beans (1 can)

  • 2 garlic cloves

  • 2-3 chipotle peppers with adobo sauce

  • 1 tsp chicken buillon powder

  • 1 tsp onion powder

  • 1/2 tsp cumin
    1 tsp dried oregano

  • 1 tsp smoked paprika

  • chili powder (optional)

  • 1 tsp lemon juice

  • 1 tsp honey

  • salt

  • black pepper

  • cheese of choice

  • tortillas of choice

  • 1/3 cup greek yogurt

  • hot sauce of choice

Instructions:

  1. Start off by draining and rinsing black beans— transfer to a large mixing bowl

  2. Season with pressed garlic cloves, finely chopped adobo peppers with a few tsps of the adobo sauce, chicken bullion, onion powder, cumin, dried oregano, smoked paprika, chili powder, lemon juice, honey, salt, and black pepper. Mash with a mashed potato masher or a fork until consistency of your liking .

  3. Heat up a skillet pan on medium-high heat and saute black bean mixture until fragrant and all spices are mixed through— about 3-5 minutes— transfer to a heat-safe container.

  4. Assemble quesadillas— add a few spoonfuls of black bean mixture and spread evenly on one side of tortilla, add cheese of choice, fold quesadilla.

  5. Airfry quesadilla at 400F for about 7-10 minutes or until tortilla is crisp on both sides— be sure to flip halfway through cook time.

    *You can also just pan fry if desired

  7. Let airfryed quesadillas cool slightly before enjoying— cheese will be hot like lava! Enjoy!

This black bean mixture lasts great in the fridge in an airtight container for up to 3-4 days. You can make quesadillas, breakfast burritos, tostadas, or even served alone as a side.
