Beef Enoki Rolls (Sauce Recipe)

Ive been wanting to try this viral food trend for THE LONGEST, and I finally had some leftover Korean bbq things to whip it up ! This would also actually be an awesome potluck dish to bring over in the cast-iron skillet with a pot of rice served on the side ! Here’s my delicioussss and easy take on this viral food trend (: .

What You’ll Need:

Servings: 4-6

  • 2 lbs thinly sliced ribeye (store-bought)

  • 7oz enoki mushrooms

  • 1/2 cup soy sauce

  • 1 cup water

  • 1 tbsp chicken buillon

  • 1/2 tbsp sugar (or monk fruit or honey)

  • 1/2 tbsp sesame oil

  • 1 large onion or 3 small shallots

  • olive oil

  • garlic powder

  • white pepper

  • salt (if needed)

  • 2 eggs

  • sesame seeds

  • 2-4 stalks green onion

Instructions:

  1. Start off by prepping vegetables and aromatics.

    -Clean, rinse, and pat dry.

    -Thinly slice green onion stems

    -Cut the ends off enoki mushrooms

  2. Carefully pull-apart small chunks of enoki mushrooms and place a bowl of water to quickly clean. (These chunks should be bite sized and not too thick). Remove and pat dry on paper towel . (Do not let them soak in water for too long).

  3. Prep sauce: In a mixing bowl, add in soy sauce, water, chicken bouillon powder, sugar, sesame oil, and mix well to combine .

  4. Prep onion/shallots: Coarsely slice into large uneven chunks .

  5. Assemble rolls: Take one slice of ribeye at a time and place a small chunk of enoki mushrooms at one end. Now, tightly roll up enoki with ribeye slice to create a “roll-up” . Continue until all enoki mushrooms are rolled in ribeye .

  6. Add some olive oil to a large non-stick skillet pan and heat up to medium . Stir-fry onions/shallots until fragrant— about 30 seconds .

  7. Lower heat to low and quickly assemble rolls into a spiral or any desired shape . Season slightly here if desired . (I add a sprinkle of garlic powder and white pepper .

  8. Pour in sauce mixture over the enoki beef rolls, return heat back to medium, and cover with a lid to let simmer . (About 5-10 minutes, or until your desired doness).

  9. While enoki beef rolls are simmering, crack two eggs in a small bowl and beat well . Once enoki beef rolls are done to your liking, lower heat back to low and pour the beaten eggs over the enoki beef rolls . Cover with lid to steam eggs for about 1-3 minutes or until eggs are to your done liking .

  10. Garnish with sesame seeds and sliced green onions ! Enjoy as is or over some rice with the sauce drizzled over . (This would be amazing with UDON NOODLES or with chili flakes on top for heat!!!)
