Bacon Bok Choy
When I saw this recipe floating around social media, I knew I had to remake ! The most simplest, yet most delicious 3 ingredient side dish you’ll ever need. BACON BOK CHOY. Growing up an asian household, I LOVED bok choy. My mom would incorporate them into soups, stir Frys, and even as an oysterr sauce based appetizer! I always forget about them because I only see them at my local asian supermarkets! Whenever I do decide to take my 30 minute commute to the nearest asian supermarket, Im always reminded to grab some! This recipe has only 3 ingredients, but will sure be satisfying! Eat it as is, as a side dish as an appetizer. with a SHOE… its amazinggggg.
Instructions:
Start off by rinsing and patting dry bok choy
Cut bok choy in half by slicing longways through the stem creating two identical pieces. Set aside.
Cut bacon into small pieces and set aside.
Heat up a pan on medium-high heat and stir fry bacon bits until crispy.
Remove bacon bits to a small bowl and set aside.
Leave about a tsp of bacon grease to pan; Remove excess bacon grease and discard.
Heat pan to medium and toss in bok choy to same pan used for the bacon. Stir fry until botchy starts to char and leaves start to wilt. About 5 minutes.
Turn off heat and add cooked bacon bits back to pan. Season with black pepper and toss until bacon is well combined. Salt is optional.
Transfer bacon bok choy to a serving dish and ENJOY right away !
