Pineapple Soju Boozy Pop

Okay, I know I say every boozy pop I make is my favorite, but hear me out… this PINEAPPLE SOJU boozy pop is my NEW FAV summer treat. The tangy and sweet from the fresh pineapple goes so well with the soju. If you’ve never had soju, it is a Korean distilled alcohol beverage that is light and smooth! If you cant get your hands on it, substitute with vodka!

What you’ll need:

Servings: 6

  • 1 cup pineapples

  • 6 oz pineapple hard selzter

  • 2 oz pineapple soju

  • 6 count popsicle mold (2.5ml each)

  • tajin (optional)

Instructions:

  1. If using fresh pineapple, cut into small cubes.

  2. Add 1 cup cut fresh pineapples to a food processor or blender.

  3. Add hard seltzer and soju to same blender. Blend till smooth, about 2 minutes.

  4. Sprinkle a little tajin in each mold

  5. Transfer pineapple mixture to molds and fill them all the way up.

  6. Freeze for at least 6-8 hours or overnight before enjoying

    *For easy removal, run popsicle mold under lukewarm water for 10 seconds.
