Green Goddess Salad

Warning; you might have hot breath after eating this salad… but its SO WORTH IT. I first had green goddess dressing from the refrigerated section from Trader Joes and it easily became a staple for all my salads to come. I recently discovered a homemade version go viral on socials and decided to recreate it, but with my own flair. OH MY. Let me tell you, I COULD NOT STOP eating it. I love the hint of spice from the jalapeno and the avocado turns it into a creamy DREAM. The fresh aromatics and decadent flavors are so bright and delicious! Eat this salad just on its own, or pair it with some crackers for a pleasant crunch! I served mine up with some parmesan chicken breast and I was speechless. Ps: Wear goggles when preparing this dressing!! hahaha

What you’ll need:

Servings: 4-6

  • half of large cabbage

  • 2 large cucumber

  • 1-2 large jalapenos

  • 2-4 stalks green onion

  • 1 small shallot

  • 2-4 garlic cloves

  • 1 large avocado

  • 1/2 cup fresh spinach

  • 1/4 cup lemon juice

  • 1/4 cup almonds

  • 1/4 cup olive oil

  • 1/4 cup fresh basil

  • salt

  • parmesan cheese

Instructions:

  1. Start by chopping up half a head of cabbage, cucumber, and jalapeno into small pieces and place in mixing bowl. Set aside.

  2. Chop green onions, slice shallot in half, and remove skin and pit from avocado, remove stems from basil. Set aside.

  3. To your food processor or blender, add in green onions, shallot, avocado, garlic, spinach, lemon juice, almonds, basil, olive oil, and salt to taste. Blend well until dressing becomes smooth.

    -Adjust olive oil to how thick or runny you like dressing.

  4. Combine dressing to cabbage/cucumber/jalapeno mixing bowl.

  5. Grate fresh parmesan right on top and fold all contents together until evenly distributed.

    -If you made too much dressing, place in refrigerator in airtight container to save for another salad. (A little got a long way!)

  6. Transfer to a serving dish and enjoy right away!
