Mini Shrimp Roll Sliders
These mini shrimp roll sliders were inspired by the famous lobster roll and are going to be a hit at your ‘sliders party’ or just as an appetizer in general !! They may not be totally authentic, but they sure are fresh, delicious, and super easy to make (:
Instructions:
Start off by prepping shrimp—
-Clean, peel, devein, and remove tails . Place in a large mixing bowl and season with as much garlic salt, paprika, and a pinch of white pepper .
-Airfry shrimp at 370F for about 10 minutes . Be sure to flip halfway through cook time
-Once shrimp are cooked, transfer to a shallow dish to cool and set aside
While shrimp are air frying, remove sweet Hawaiian rolls from package and place on a flat surface . Carefully cut two slits along each roll to resemble a long rectangle and remove the piece entirely (see video for images). This will be the "mini roll” .
Place butter in a microwave safe dish and microwave for about 30 seconds- one minute to melt butter . Once butter is melted, sprinkle as much furikake seasoning as desired and mix well to combine .
Use a basting brush to brush the furikake butter all over the mini rolls and toast in a pre-heated oven at 350F for about 10 minutes or until slightly crisp . (You can also pan-toast the sides of the rolls one by one to resemble toasted lobster rolls if you have more time).
Once your shrimp are completely cool, rough chop and place in a mixing bowl. Dress with japanese mayo, sriracha, ponzu, sesame oil, and half of your chopped green onions . Mix well and refrigerate for at least 15 minutes or more to set . (Taste and adjust dressing to your own taste).
Assemble by taking one mini roll at a time and lining with one seaweed snack, followed by a few scoops of the shrimp mixture, and garnish with a squeeze of fresh lemon juice, more chopped green onions, and paprika for some color .
Serve and enjoy right away !
