Leftover Turkey Pho

For Christmas my in-laws came over and smoked this 15lb turkey and then deep-fried it to have the most beautiful and tastiest center piece everrrr . The next morning I woke up to a turkey carcass in my fridge that still looked plentiful and meaty . I decided to challenge myself to create a pho broth and it turned out SOOOO good, I had to share this quick and easy recipe with you . Because I wasn’t planning on make pho today, I just used whatever I had— but could you imagine fresh onion and adding all the fresh herbs ?! Did I mention it was done in less than in hour ?

What you’ll need:

  • leftover turkey carcass

  • 2 tsps chicken bouillon powder

  • 2 tsps fish sauce

  • 4 tsps palm sugar

  • 1 tsps dried baby shrimps

  • 1 tsp garlic powder (or 3 fresh smashed garlic cloves)

  • 2 tsps onion powder (or one large fresh peeled onion halved)

  • salt

  • black pepper

  • dried rice noodles (or any noodle of choice— ramen, udon, etc.)

  • sriracha

  • hoisin

  • fried garlic

  • chili oil

  • chopped green onions

  • lime cut into wedges

  • optional— mint, basil, cilantro, bean sprouts, etc.

Instructions:

  1. Start off by placing leftover turkey carcass in a large pot and fill up with water until carcass is completely submerged .

  2. Season pot of water and turkey carcass with chicken bouillon, fish sauce, palm sugar, dried baby shrimps, garlic powder, and onion powder . Mix well .

  3. Place pot on stove and heat up on high until soup comes in a rolling boil . Once soup is on a rolling boil, lower heat to medium-low and let simmer for at least 30 minutes .

    *Don’t forget to remove and discard any scum that floats to the top of the soup.

  4. After about 30 minutes on simmer, you want to taste soup and adjust if needed . I added about 1 tsp of salt . Lower heat to low and let simmer for another 30 minutes and turn off heat .

    *You can also remove turkey carcass and shred turkey meat if desired

  5. Soup’s flavors should have released fully by now— the longer you let the soup simmer, the more flavorful it will be . Prepare noodles by packaged instructions .

  6. Place cooked noodles in a serving bowl and add a few ladles of turkey soup broth . Dress with some shredded turkey meat, sriracha, hoisin, lime juice, fried garlic, chili oil, black pepper, green onions, and any other herbs/sprouts you’d like .

  7. Mix well and enjoy right away !
