Kalua Pork Fried Rice
This is a super easy fried rice recipe that you can use any protein with . Today I was inspired to use kalua pork as I was just in Honolulu a few weeks ago . Kalua pork was purchased already pre-cooked with sauce for convenience . Love all the flavors of umami on this one .
What you’ll need:
Servings: 4
2 cups day old cooked rice
12oz precooked kalua pork
2oz pork au ju or kalua sauce
1 onion (sliced)
4-6 cloves garlic (minced)
1 tsp brown sugar
2 tsps Golden Mountain seasoning sauce or soy sauce
1.5 tsps sesame oil
2 tsps oyster sauce
salt
black pepper
2 cups frozen carrots, peas, and corn
eggs
sriracha
crispy garlic
Instructions:
Start off by slicing onions and mincing garlic— set to the side .
Heat up olive oil in a large wok or skillet on medium-high . Once wok is warmed-through add in sliced onions and minced garlic . Stir fry until fragrant— about 30 seconds and then add in brown sugar . Continue stir frying .
Now add in cooked store-bought kalua pork and stir fry with aromatics until pork is warmed-through . Add in pork au ju as needed to moisten pork .
Lower down heat to medium-low and add in day old rice, followed by frozen veggies . Season with seasoning sauce, sesame oil, and oyster sauce . Mix well to combine . Turn off heat . Taste and adjust with salt and black pepper .
For eggs— you can either incorporate scrambled eggs into the dish itself or make individual sunny side up eggs like I did .
To assemble— pack some fried rice into a small bowl, be sure to push it down with spatula to ensure it molds well . Grab a flat serving plate and carefully put the bowl upside onto the plate and lift — it should be a cute mound of fried rice ready to garnish .
Drizzle some sriracha, top with sunny side up egg, and crispy garlic . ENJOY !
